...but more importantly, the BOYS LOVED it!
AND there's only four ingredients!
(Oh, and by the way, my boys (and their parents) ate an ENTIRE head of cauliflower and loved every bite!)
I actually call this "Just Joan Casserole" after the lady who gave me the recipe. She has no idea the origination of the recipe, just word-of-mouth through her circles.....so I'm giving her credit.
You'll need:
- A head of cauliflower
- A tube of sausage (check well to make sure there's no MSG in there)
- A brick of cream cheese (I prefer the neufchatel cheese)
- Cheddar cheese (you can have it already shredded, but I'm finicky about shredding my own)
Steaming the cauliflower will take the longest, so start with that. If you don't have a steamer (I highly recommend you RACE out and get one!!! I use mine everyday in the summer to eat our fresh veggies out of the garden!), you can boil the cauliflower or roast it, but I prefer steaming. You'll need to make sure that it comes out REALLY well done, so I put it on for 25 minutes instead of the 18 the directions call for.
While the cauliflower is steaming, brown the sausage, and while that's browning, you can shred the cheese.*
(This is your chance to be a gold star multi-tasker!!!)
*Shred extra cheese because you know there's a 4 1/2 year old who cannot resist sneaking some freshly shredded cheese!
After your sausage is sufficiently browned and crumbled, drop the entire cheese brick in the pan and let it melt together, stirring regularly to ensure even coverage. Mmmmmmm.
After you hear the "DING" of the steamer, pour the cauliflower into a 9x9 pan. Start mashing. The more you mash, the better.
*Remind your 4 1/2 year old that he's had enough shredded cheese, and you now barely have enough to cover your casserole.
Once the cauliflower is mashed, pour your sausage/ cream cheese mixture over top and mix well.
Spread evenly in the pan.
Top with shredded cheese.
Pop into a 375 degree oven until cheese is melted. (10-15 minutes)
Serve with love to smiley faces.
Yeah....I'd say it was a hit. :)
